About Sous Vide Cooking:

Sous vide (pronounced soo–veed) is a culinary method that involves cooking vacuum-sealed food in low-temperature water for a longer length of time than compared to other methods. The term sous vide is French for "under vacuum" and was developed in the mid-1970s by chef Georges Pralus. Pralus initially applied the sous vide method to cooking foie gras (goose or duck liver), as a way to retain the fat content and improve texture. Other gastronomy pioneers soon began experimenting with this technique, applying it to all manners of food to boost flavor and appearance.

The technique was perfected by a French scientist Bruno Goussault, when the French national railway company (SNCF) asked him to develop recipes that could be served in first class of a new line they were to open. It would need to be of great quality; it would have to have a longer shelf life and would have to be easily re-heated without loss of quality. Goussault enlisted the help of French top chef Joel Robuchon and work together on that project for two years.

The idea behind sous vide cooking is to cook the food at the exact temperature you want the food to be served. This cooking technique typically involves cooking food for longer periods of time at a lower temperature. There are several of advantages to cooking sous vide, the most appreciated of professional gourmet chefs is consistency, as the food cooks at the same temperature at which it is supposed to be served, it can’t be overcooked, and will never go higher that the temperature of the water bath. Vacuum sealed foods increase the flavor and nutrient retention more than any other storage method. Dried and dehydrated goods are impervious to moisture once vacuum sealed and since the plastic is sealed tight to the surface of the meat, steaks and pork chops won't be damaged by freezer burn.
